Chablis 1er Cru Vau de Vey-Francois de Nicolay
The Vau de Vey is the archetype of the great Chablis. This Chablis Premier Cru offers a delicate and complex aromatic bouquet. Notes of white pulp fruits, flowers and minerals abound. The palate is tense and slightly acidic, also revealing great aging potential. François de Nicolay is the owner of Chandon de Briailles and has an interesting history in the world of wine. Before his move to Savigny les Beaune in 2001, following the call of his mother Nadine, François was a well-known wine shop in Paris. Today, the “François de Nicolay” brand is associated primarily with Burgundian terroirs, but occasionally also expands outside the Cote d'Or, purchasing grapes from Chandon de Briailles itself and vinifying them more liberally.
