Chablis Les Chemins 2020-Francois de Nicolay

After living for some time in Paris, in the early 2000s François de Nicolaÿ acquired the Chandon de Briailles family estate located in Savigny-lès-Beaune. To this property he decided to add a maison de négoce that bears his name, “François de Nicolaÿ”. The winemaker, who aims to market authentic wines capable of fully representing the terroirs of origin, prefers a supply of certified organic or biodynamic grapes. In the ancient cellar of Savigny-Lès-Beaune, vinification and aging are carried out without artifices and additives, in the most natural way possible; some cuvées are therefore natural or produced without sugaring. No pumping over, filtration or clarification is carried out either.
