A wine from a small 1,700-square-meter vineyard, this blend of native white grapes is vinified together in varying percentages depending on the vintage. The grapes are hand-harvested in 250-kg perforated bins, destemmed separately, and vinified as a white wine. Fermentation occurs spontaneously with indigenous yeasts. Aged for 6 months in stainless steel and then 12 months in bottle before release.
