Traditional Balsamic Vinegar of Modena D.O.P. is obtained from 100% cooked grape must, matured by slow acetification derived from natural fermentation and progressive concentration by very long aging in series of jars of different woods, without any addition of aromatic substances.

 

Ingredients:

Must cooked from salami, trebbiano and spergola grapes, subjected to alcoholic fermentation and subsequently acetic oxidation.

Where to use it:

This excellent product enriches every dish with a delicious sweet and sour note. Perfect if paired with Parmigiano Reggiano, beef fillet, strawberries.

Aspect:

Intense, clear, brilliant brown.

Density:

Very dense and persistent.

Smell:

Penetrating and persistent, with an intense bouquet with a pleasant acidulous note, aromas of barrel woods.

Taste:

Sweet and sour, well balanced, acidity and aroma in accordance with all olfactory characteristics.
