Château Pierre-Bise - Savennieres Roche aux Moines
Tessa Laroche today manages this splendid corner of the Loire with a vineyard of about 10 hectares, the Chenin Blanc that comes from it is harvested manually and after a light pressing the fermentation with indigenous yeasts begins. The product obtained is vinified in barrique and foudre for a period of 12 months. After this period of refinement the masses are assembled and rest for another 6 months before being bottled.
Savennieres Roche aux Moines is a wine of great character and structure. This Chenin Blanc manages to enhance the characteristics of the territory by pushing on notes of flint, of young rather evolved fruits such as quince but also complex notes of acacia to end on a marine finish with a good persistence.
