The Pas Operé Pensiero Brut SP sparkling wine from the Ca' del Vent winery represents an authentic and refined Classic Method. The wording “SP” stands for “second pressing”, in reference to the fact that the sparkling wine base adopted derives from the second pressing must. Ca' del Vent Pensiero SP Pas Operé Spumante Brut is made from only Chardonnay grapes. "Pensiero" is a dynamic and elegant sparkling wine, the result of vinification in wood and long aging on the yeasts. It is not dosed, giving a dry, refined and creamy sip, of long persistence, with notes of pastry, bread crust, white flowers, yellow fruit and pleasant saline sensations.
