The latest addition to this splendid Rovereto winery, the "Balter Nature" is produced with 100% Chardonnay grapes, and is therefore defined as a Blanc de Blancs. 35% of the wine undergoes the first fermentation in barriques. After the draft, around June/July, it rests for 48 months on the yeasts, before being disgorged and dosed with a sugar-free liqueur. Nice perlage, very persistent, which facilitates the rise of bread crust and pastry notes, balanced by a citrine note and a nice salinity. Creamy, soft and stringy on the palate, with great freshness.
