Pleased to present… His Excellency the sulky onion! The starting point is an ancient Venetian onion that aroused my curiosity and whetted my imagination, so much so that I dedicated a recipe to it. The result is a product with a unique and surprising taste! The sulky onion requires a long and careful preparation time and its peculiarity is the cut into carpaccio.
