I wanted to re-propose another version of chicory using this wonderful vegetable of Venetian origin with an intense red color and white streaks, a crunchy texture and a slightly bitter taste. The peculiarity of this vegetable is its strong flavor which is wrapped in a delicate mix of extra virgin olive oil and high oleic sunflower seeds. It is an ideal side dish for grilled meat or fish. Excellent as an accompaniment to cheeses and cold cuts.
