The grapes at the origin of this cuvée come from the predominantly sandstone-clayey substrate located immediately below the village of Mittelbergheim. Manual collection of 30 kg boxes. The maceration in whole bunches and semi-carbonic at the start lasts an average of two weeks and takes place in steel cuvas. This is followed by elevages of 6 months in Burgundian pièces from the fourth to the sixth passage. Indigenous yeasts. No gluing and filtration. Sulphiting absent during vinification and from zero to max 15 mg / lt in bottling.
