Metodo Classico-Gigi Ravarini
Pure Pinot Noir, spontaneously fermented in concrete tanks and aged in steel. Second fermentation with yeasts and sugars, at least 31 months on the yeasts, minimal additions of sulphur. Pinot Noir from Franciacorta which is very deep and mineral, expertly tamed to become a sparkling wine with character. Pleasant citrus notes combine with hints of white pulp fruit. A mineral trace gives excellent freshness, adding to an excellent balance and persistence. An excellent wine for an aperitif, it retains its versatility at the table, particularly in combination with seafood dishes.
